No mystery math

Reviews are a signal.
Not the whole story.

A transparent method, with the limits written down.

What the first ranking actually measures

This is an international discovery seed drawn from 21 US coastal metros and eight international search areas: London, Paris, Sydney, Tokyo, Cancale, Whitstable, Dublin and Auckland. It is not exhaustive and it does not rank every oyster bar in the world.

We queried Google place data for oyster bars, removed duplicate place IDs, required at least 300 reviews, and kept oyster-forward venues identified by oyster-related business names, including translated terms, or a checked oyster menu. We excluded obvious pubs, a ramen shop and a market stall. This rule still leaves out some excellent seafood restaurants and raw bars. The new top ten were checked against business websites or menus. International scores use exactly the same formula as US venues.

The review-weighted score

Score = (R × v + 4.4 × 300) / (v + 300), where R is the Google star rating and v is the Google review count. The 4.4 baseline and 300-review prior are fixed editorial choices. The display score has three decimal places; sorting uses the unrounded score, with review count as a tie-breaker.

A high rating with very few reviews is pulled toward the baseline. Review count increases confidence; it does not replace the star rating. Businesses with separate locations keep separate place IDs and entries.

What this cannot tell you

The rating covers the entire business. We did not read or score individual oyster reviews. Different countries and visitor audiences use rating scales differently; a shared formula does not remove those biases. Google ratings can include service, other food and tourist traffic. A closed or miscategorized listing can slip through. This is a useful starting point, not a declaration of the world's best oyster.

Regions are a separate question

Region cards are editorial contenders backed by sources. They are not ordered by a computed quality score. Restaurant ratings cannot prove the quality of a bay's oysters. Reader nominations will be reviewed for duplicates and spam before any public count appears.

Monthly refresh

Rerun the same searches, archive the dated snapshot, remove duplicate listings, apply the same criteria and formula, and check the top ten against current menus and listing status. Verify festival dates from the organizer, rebuild, and compare the top ten with last month's list before publication. Refreshing content is not scheduled yet.
