Cook oysters thoroughly. Keep refrigerated at 40°F (4°C) or colder. Raw or undercooked oysters can cause serious illness. These recipes use fully cooked oysters. For cooked shellfish, reach 145°F (63°C) for 15 seconds. Timing is a guide; verify the food. Public-health cooking guidance ↗
Ingredients
- 1 pint (about 475 ml) shucked oysters, drained and held cold
- 1/2 cup (65 g) all-purpose flour
- 1/2 cup (75 g) fine cornmeal
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 egg beaten with 2 tablespoons milk
- Neutral frying oil and lemon wedges
Method
- In a heavy pot, heat 2 inches (5 cm) of oil to 375°F (190°C), leaving ample room above the oil. Never leave it unattended.
- Mix flour, cornmeal, paprika, pepper and salt. Dip each oyster in the egg mixture, then the dry coating.
- Fry a small batch, keeping the oil close to 375°F. Follow the public-health guidance of 10 minutes for shucked oysters, and verify the meat reaches 145°F (63°C) for 15 seconds. Reduce batch size rather than crowding the pot.
- Drain on a rack and serve immediately with lemon. Do not reuse utensils that touched raw oysters without washing them.
This is a thorough-cooking recipe, not a quick flash-fry. Use a deep-fry thermometer and check the largest oyster. Let used oil cool fully before handling.
